Shiitake mushrooms
One of Ishikawa Prefecture’s major products, cultivated all year-round
Shiitake mushrooms are the most popular mushrooms that can be harvested throughout the year. Fresh and dried mushrooms are sold. There are two types of cultivation methods: log cultivation using logs of sawtooth oak, konara oak, etc. and bed cultivation using a culture medium containing sawdust applied with nutrients. Since many cultivators are changing to bed cultivation, log-cultivated shiitake mushrooms are produced less and becoming valuable. However, there is a clear difference in the dried mushrooms: log-cultivated shiitake mushrooms are better in flavor, odor and texture. Thus, farmers who prefer to use log cultivation still exist.
